Miso-lime dressing with salad and DIVO avocado oil.

Miso lime dressing with avocado oil

UNBORING SALAD #1 🥗

A super quick salad dressing that makes even the simplest salad feel a little more special.

A quick note upfront: You can use water not only to thin the consistency but also to make the flavour a bit milder. So, it's best to add it gradually and taste as you go.

The same applies to sesame oil: use it sparingly. It packs a lot of flavour and can easily overpower the dressing.

Why avocado oil works in this miso dressing

DIVO avocado oil has a mild flavour. That is exactly what’s useful here: miso, lime, ginger, and sesame oil are allowed to set the tone, while the avocado oil binds the ingredients into a creamy dressing.

Perfect for when you want to surprise your wife, family, or friends without spending half an hour in the kitchen. This miso-lime dressing pairs wonderfully with a fresh, crisp salad, but just as well with fish – and especially well with anchovies.

Ingredients for the miso-lime dressing

  • 3 tbsp DIVO avocado oil
  • 1 tbsp light miso paste
  • Juice of 1 lime
  • 1 tsp honey or maple syrup
  • 1 tsp soy sauce
  • 1 tsp freshly grated ginger
  • ½ tsp sesame oil
  • 1–2 tbsp water
  • Chili flakes to taste

Preparation: simply shake in a screw-top jar

Put everything into a small screw-top jar, close the lid, and shake vigorously until the dressing is smooth and creamy.

How to find your balance of sweet, sour, and salty

What I always pay attention to in dressings like this is the ratio between sweetness and miso. Essentially, it’s about that classic sweet-sour-salty balancing act – and in my opinion, there isn’t one single "right" ratio.

Personally, I don’t like my dressings too sweet. If I have to choose, I am firmly Team Miso. That’s why I usually take a little less honey or syrup than in the classic recipe above.

If you prefer it less sweet like I do: Start with ½ tsp honey, taste it, and only add more if it really needs it. Likewise, stir in the water gradually until the flavour and consistency are just right for you.

No fresh ginger at home?

Then you can also use a tiny bit of ginger powder or even a dash of hot sauce. But be very sparing – ginger powder, in particular, can quickly become too much.

What pairs well with the miso-lime dressing?

It goes particularly well with crunchy cabbage, cucumber, avocado, carrots, cilantro, and toasted peanuts or cashews. That’s how you turn it into a salad with real character in just a few minutes.
