Creamy one-pot pumpkin pasta beside DIVO avocado oil.

One-Pot Pumpkin Pasta: creamy in 30 minutes

For this One Pot Pumpkin Pasta, you need a large pot and about 30 minutes. The Hokkaido squash, onion, and garlic are sautéed briefly. Then, the pasta cooks directly in the vegetable broth. Cream cheese and Parmesan are added only at the end. This keeps the sauce creamy without needing a second pot or a blender.

The recipe makes four servings and works best with short pasta shapes like penne or fusilli. They are easier to stir in the pot than long spaghetti and cook more evenly among the pumpkin pieces.

Why avocado oil suits pumpkin pasta

The oil has a simple task here: you use it to sauté the onion, garlic, and Hokkaido before adding the broth and pasta to the pot. DIVO Avocado Oil is refined and has a mild taste. This allows the pumpkin, thyme, nutmeg, and Parmesan to remain the focus.

You can therefore replace the olive oil used in many pumpkin recipes with avocado oil for this step. This is not a general statement about which oil is better. In this pasta dish, a subtle flavour is practical because the oil later becomes part of a mild, creamy sauce. You can find more about using it in hot cooking in the guide Avocado oil for frying.

Ingredients

For 4 servings:

  • 400 g short pasta, for example penne or fusilli
  • 500 g Hokkaido pumpkin, weighed after seeding
  • 1 medium onion
  • 2 cloves of garlic
  • 2 tbsp DIVO Avocado Oil, refined
  • 750 ml hot vegetable broth
  • 150 g plain cream cheese
  • 50 g finely grated Parmesan
  • 1 tsp dried thyme or the leaves from 3 sprigs
  • 1 pinch of freshly grated nutmeg
  • 1 tbsp lemon juice
  • Salt and black pepper
  • 100 to 200 ml hot water if needed
  • optional: chopped parsley or toasted pumpkin seeds for serving

Preparation

  1. Wash the Hokkaido thoroughly, remove the seeds, and cut the flesh into cubes of about 1 cm. Peel the onion and garlic. Finely dice the onion and mince the garlic.
  2. Heat the avocado oil in a large, wide pot over medium heat. Sauté the onion in it for about 2 minutes until translucent. Add the pumpkin and sauté with it for 4 minutes. Stir in the garlic and thyme and let them cook for about 30 seconds.
  3. Add the pasta and hot vegetable broth to the pot. Stir thoroughly and bring everything to a boil. Then, reduce the heat. Let the pasta simmer uncovered for about 11 to 14 minutes, depending on the package instructions, stirring regularly across the bottom of the pot.
  4. Check the consistency after about 10 minutes. If the noodles are still firm and there is hardly any liquid left, add 50 ml of hot water first. Only repeat this if the pasta needs more liquid. The shape of the pot, type of pasta, and heat setting influence how quickly the broth is absorbed.
  5. As soon as the pasta is al dente and the pumpkin is soft, mash a few pumpkin cubes against the edge of the pot with a wooden spoon. Remove the pot from the heat. Stir in the cream cheese and Parmesan until both have combined with the starchy liquid.
  6. Season the pumpkin pasta with nutmeg, lemon juice, salt, and pepper. Let it rest for 2 minutes. The sauce will thicken a bit more during this time. If it is too firm for your liking, stir in hot water a little at a time.

How to make the pumpkin pasta creamy

The sauce is created from three components: soft-cooked Hokkaido, starch from the pasta, and cream cheese. You therefore do not need to puree the pumpkin completely. It is enough to crush a few soft cubes in the pot at the end.

Only stir in the cream cheese and Parmesan when the pasta is cooked and the pot is no longer on the hot stove. This makes it easier to control the consistency. Immediately after cooking, the sauce may still appear slightly more liquid, because the pasta and pumpkin will absorb more liquid while resting.

If the One Pot Pasta becomes too thick or too liquid

If the pasta is not yet cooked but the broth has almost disappeared, it lacks liquid. Add hot water in small portions and keep stirring. Cold water slows down the cooking process unnecessarily.

If the sauce is too liquid at the end, let the pasta stand for another 1 to 2 minutes without a lid. Only stir in additional Parmesan afterwards. If you add a lot of cheese immediately, the sauce can become heavier and saltier than planned.

If the pasta sticks to the bottom, the heat is usually too high or you have stirred too infrequently. A wide pot helps because the pasta and pumpkin cook in a shallower layer.

Variations for the pumpkin pasta recipe

For a heartier version, you can crumble some feta over the pasta to serve. Fresh sage also goes well with Hokkaido. Sauté a few leaves briefly in the avocado oil, remove them from the pot before adding the pumpkin, and add them back as a topping at the end.

Toasted walnuts or pumpkin seeds add more crunch. If you like it spicier, add a small pinch of chili flakes to the pot along with the garlic. These additions do not change the preparation.

Frequently asked questions

Which pumpkin is suitable for the pasta?

Hokkaido works well because the small cubes can soften in the same time it takes for short pasta to cook. Cut them as evenly as possible. Larger pieces take longer and may still be firm when the noodles are already done.

Do I have to peel the Hokkaido?

For this recipe, the skin stays on. Wash the pumpkin thoroughly, remove damaged spots, and cut it into small cubes. If you want a particularly smooth sauce, you can peel it anyway.

Can I use olive oil for the pasta with pumpkin?

Yes. Various frying oils work for this recipe. Refined avocado oil is the intended choice if you want the oil's flavour to remain in the background. If you specifically want an olive aroma, you can use a suitable olive oil instead.

Can I use cream instead of cream cheese?

Yes, the consistency will then be slightly more liquid. Replace the cream cheese with 150 ml of cooking cream and start with a little less broth. Only add more broth or hot water if the pasta needs it.

Can I prepare the One Pot Pumpkin Pasta in advance?

The sauce is creamiest fresh from the pot. It will continue to thicken as it cools. Reheat leftovers slowly and stir in some water or vegetable broth until the desired consistency is reached again.
